Level Up - Part 22: Anja's Chicken Chili

Long post today. Most won't be this long as I know it's not sustainable, but lots going on today.



Morning weigh-in: 252.2 lbs.

My friend gave me a fantastic recipe. I slow cooked it over night, fridged/froze it this morning, and had it for dinner tonight. Presenting:

Anja's Chicken Chili (Adapted from HERE)



Ingredients:
  • 16 oz black beans
  • 16 oz kidney beans
  • 16 oz tomato sauce
  • 30 oz diced tomatoes
  • 1 packet taco seasoning
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 3 boneless chicken breasts
Recipe:
  1. Add everything but the chicken breasts to the slow cooker.
  2. Stir it all up.
  3. Add the chicken breasts on top.
  4. Cook on low for 10 hours.
  5. Remove the chicken breasts, shred, and return to the pot, mixing it all up.
  6. Done!
All the ingredients added up to 2,000 calories. I split it into four big portions.



Had the first tonight topped with cheddar, microwaved broccoli on the side.

Tomorrow's Training

8:00am: Three egg omelet with 1/4 cup cheddar, broccoli on the side. (350 cal)
Noon/afternoon: Potluck lunch! A holiday celebration event at work. Really looking forward to this. Probably some snacks at the festivities too. (lol idk cal)
6:30pm: Cheeseburger, no bun, fruit on the side.

Worked out today. Rest tomorrow.

Pushed blacksmithing to about 130. Started on the next zone, the Western Plaguelands.



But more importantly, it's the Feast of Winterveil! Christmas comes to Azeroth.
