Made a new meal today. A simple baked chicken pesto. Found this as the first recipe in this Tasty video:
Tasty videos are really cool and accessible. This year, I want to try making what I see more often.

Baked Chicken Pesto
Ingredients
- two chicken breasts
- 0.5 C shredded mozzarella
- 3 T basil pesto sauce
- half a tomato. I used a beefsteak.
- Preheat oven to 400 degrees.
- Season the breasts and spread pesto sauce on top.
- Add sliced tomato over pesto.
- Add mozzarella on top of everything.
- Bake for 35 minutes. (I baked it for 30 minutes, but the chicken temp was only about 150 degrees. Took another 5 minutes to get it up to 165 degrees.)
